Indori Egg Bhurji Poha Bowl in 15 Minutes
Share on Social Media
Ask anyone from Indore what a perfect morning looks like, and the answer usually involves a plate of poha, a sprinkle of tangy jeeravan, and a hot cup of chai. Today we are borrowing that magic and pairing it with something equally comforting: soft, spiced egg bhurji. The result is a one-bowl breakfast that comes together in about fifteen minutes and tastes like it took much longer.
Why this pairing works
Poha is gentle and slightly sweet, which makes it a wonderful canvas for bold flavour. Indori Jeeravan Masala brings cumin, tang and a little heat, while Egg Seasoning rounds out the bhurji with a savoury, peppery warmth. Together they give you two textures and two flavour notes in a single bowl, without needing a long list of spices from your cupboard.
What you need
- 1 cup thick poha, rinsed and drained
- 4 eggs
- 1 small onion, finely chopped
- 1 green chilli, chopped
- 1 small tomato, chopped
- A handful of curry leaves and mustard seeds
- 2 tablespoons oil or ghee
- Salt and turmeric, to taste
- 1 to 2 teaspoons Indori Jeeravan Masala
- 1 teaspoon Egg Seasoning
- Fresh coriander, lemon wedges and sev, to serve
How to make it
1. Prepare the poha
Rinse the poha in a sieve until soft but not mushy, then let it rest for five minutes. Toss it with a pinch of salt, a little turmeric and half a teaspoon of sugar if you like the Indori sweet-and-tangy balance.
2. Temper and cook
Heat a tablespoon of oil in a wide pan. Add mustard seeds, curry leaves and green chilli, and let them crackle. Stir in half the onion, cook until translucent, then add the poha and gently mix for two minutes. Cover and steam on low for another two minutes. Set aside.
3. Make the bhurji
In the same pan, heat the remaining oil. Cook the rest of the onion and the tomato until soft. Crack in the eggs, season with salt and the Egg Seasoning, and stir slowly so the curds stay soft and creamy. Take it off the heat just before it looks fully set, because it keeps cooking in the pan.
4. Assemble
Spoon the poha into a bowl, top with the bhurji, and dust generously with Indori Jeeravan Masala. Finish with coriander, a squeeze of lemon and a handful of sev for crunch.
Tips for the best bowl
- Use thick poha so it holds its shape and does not turn pasty.
- Add the jeeravan at the end rather than cooking it, so its bright, tangy aroma stays intact.
- Not an egg eater? Swap the bhurji for crumbled paneer or sautéed mushrooms and still use the seasoning.
- Pack it in a tiffin: the flavours settle beautifully by lunchtime.
Make it a breakfast ritual
If you would like to keep both blends handy, the Indori Jeeravan and Egg Seasoning Combo is a convenient way to stock up. Both are shaker-style, so a quick sprinkle is all it takes to turn an ordinary morning plate into something you will actually look forward to.
