10-Minute Masala Veg Noodles with Noodle Seasoning
Share on Social Media
Some evenings call for a dinner that is on the table before you have finished deciding what to cook. This masala veg noodle stir-fry is exactly that: ten minutes, one pan, and a handful of vegetables from the fridge. The secret to its flavour? A generous sprinkle of our Noodle Seasoning, which saves you from reaching for five different bottles and sauces.
Why Noodle Seasoning Works So Well
Street-style noodles get their character from a balance of salt, spice, tang and a little warmth. Instead of measuring each of these out separately, a ready-made noodle masala brings them together in one go. It is the same idea as a good chaat masala: a blend that has already done the balancing for you, so all you need to do is cook.
It also means consistency. Whether you are cooking for the family on a Tuesday or feeding hungry friends after a movie, the flavour turns out the same every time.
What You Will Need
- 200 g noodles (hakka, instant or whole wheat, whatever you have)
- 2 tbsp oil
- 3 cloves garlic, finely chopped
- 1 small onion, thinly sliced
- 1 cup mixed vegetables: carrot, capsicum and cabbage, cut into thin strips
- 1 to 2 tsp Noodle Seasoning, to taste
- 1 tsp soy sauce (optional)
- Spring onion greens to finish
Method
Boil the noodles. Cook them in salted water until just done, then drain and rinse under cold water. Toss with a few drops of oil so they do not stick together.
Heat the pan properly. Noodles love a hot pan. Add the oil, let it shimmer, then add the garlic and let it turn lightly golden for about 20 seconds.
Stir-fry the vegetables. Add the onion first, then the carrot, capsicum and cabbage. Keep the flame high and toss for two to three minutes. You want the vegetables crunchy, not soft.
Add noodles and seasoning. Tip in the noodles, sprinkle over the Noodle Seasoning and add the soy sauce if using. Toss everything well for a minute so each strand is coated evenly.
Finish and serve. Taste, and add a pinch more seasoning if you like it bolder. Scatter with spring onion greens and serve straight away.
Tips for Better Noodles
- Do not overcook the noodles. They finish cooking in the pan, so pull them out a touch early.
- Cook in small batches. A crowded pan steams instead of fries, and you lose that lovely street-food char.
- Season gradually. Start with one teaspoon and build up. You can always add more at the end.
Ways to Switch It Up
Scramble an egg into the pan before adding the noodles for a protein boost, or add crumbled paneer or tofu for something heartier. For kids' tiffins, keep the vegetables finely chopped and go easy on the seasoning. And if you are feeling playful, the same seasoning is lovely sprinkled over fried rice, roasted vegetables or even fresh-popped makhana.
