Pizza Paratha Recipe with Chili Flakes & Pizza Seasoning

Some of the best dishes in an Indian kitchen are born from leftovers and a little curiosity. This pizza paratha is exactly that: a golden, crisp-edged paratha stuffed with melty cheese, sweet onions and capsicum, and finished with a sprinkle of Italian herbs and a kick of red chilli. It is the kind of thing that disappears from the plate before you've finished plating it.

Why This Fusion Works

Parathas and pizza share a lot of DNA: a bread base, a savoury filling, and a love of ghee or olive oil. Swap the usual aloo masala for cheese and veggies, add oregano-style herbs, and you get a familiar comfort with an Italian accent. It's also a lovely way to use up extra dough, and it travels well in a tiffin box.

What You'll Need

This makes 4 parathas.

  • 2 cups whole wheat flour (atta), plus extra for dusting
  • 1 cup grated mozzarella or pizza cheese
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped capsicum
  • 2 tbsp sweet corn kernels (optional)
  • 1 to 2 tbsp pizza sauce or tomato ketchup
  • 1 tsp pizza seasoning, from our Chili Flakes and Pizza Seasoning Combo
  • 1/2 to 1 tsp Masala Potli Chili Flakes, to taste
  • Salt, water, and ghee or butter for cooking

Method

1. Make the dough

Knead the atta with a pinch of salt and enough water to make a soft, pliable dough. Cover and rest it for 15 minutes. Resting makes rolling much easier, especially once the filling goes in.

2. Prepare the filling

In a bowl, mix the cheese, onion, capsicum, corn, pizza sauce, pizza seasoning and chili flakes. Taste a small pinch of the cheese mixture: it should feel lively and well seasoned, because the dough will mellow it out.

3. Stuff and roll

Divide the dough into four balls. Roll each into a small circle, place a generous spoonful of filling in the centre, and pull the edges together to seal. Dust with flour and roll gently into a 6-inch round. Press lightly and don't worry if a little cheese peeks out; it only makes the edges crispier.

4. Cook until golden

Heat a tawa on medium. Cook the paratha for a minute, flip, and drizzle a little ghee around the edges. Press gently with a spatula and cook until both sides have golden-brown spots and the cheese inside is melted, about 3 to 4 minutes per paratha.

Serving Ideas

Cut into wedges like a pizza and serve with ketchup, a cooling mint-curd dip, or a spoonful of green chutney. For a snack-time spread, pair it with masala chai. For a more filling meal, add a side of raita and a simple kachumber salad.

Tips for the Best Result

  • Keep the filling dry. Too much sauce makes the paratha tear while rolling. A thin smear is plenty.
  • Dial the heat up or down. Kids' tiffin? Use a pinch of chili flakes. Adults? Be generous and sprinkle extra on top as it comes off the tawa.
  • Use the herbs at the end too. A final dusting of pizza seasoning on the hot paratha gives a fresh aroma that cooking mellows.
  • Make-ahead friendly. Stuff and roll the parathas, layer them with parchment, and refrigerate for a few hours before cooking.

A Quick Note on Chili Flakes

Good chili flakes come from whole dried red chillies, so you get both heat and a gentle fruity warmth rather than just raw fire. That is why a small amount goes a long way in a recipe like this. If you like keeping a pizza-night shaker on the table, the Chili Flakes and Pizza Seasoning Combo pairs both in one go, and works just as well on pasta, garlic bread, omelettes and fries.
