Masala Egg Bhurji Toast: A 10-Minute Breakfast Recipe
Share on Social Media
Some mornings call for something better than plain scrambled eggs, but you don't have the patience for a full dhaba-style bhurji with chopped onions, tomatoes and three pans. This recipe sits right in the middle: a soft, spiced egg bhurji on buttered toast that tastes like you tried much harder than you did.
The secret is leaning on a good seasoning blend instead of measuring out five separate spices. We use our Egg Seasoning 70g for the savoury, peppery base and a pinch of Chili Flakes 40g for a clean, bright heat.
Why this combination works
Eggs are mild and creamy, so they love a blend that brings warmth and a little tang without overpowering them. Egg seasoning does that in one sprinkle. Chili flakes, made from whole dried red chillies, add a lively kick and a bit of colour that ground chilli powder can't quite match.
What you'll need
- 4 slices of bread (sourdough, brown or plain white all work)
- 4 eggs
- 1 tablespoon butter, plus more for the toast
- 1 small onion, finely chopped
- 1 green chilli, finely chopped (optional)
- 1 small tomato, deseeded and finely chopped
- 1 teaspoon Egg Seasoning, plus extra for finishing
- A pinch of Chili Flakes
- Fresh coriander, chopped
- Salt, only if needed (the seasoning is already seasoned)
How to make it
- Toast the bread. Butter both sides lightly and crisp the slices on a hot tawa or pan until golden. Set aside.
- Soften the onion. Melt the butter in a pan over medium heat. Add the onion and green chilli and cook for two to three minutes until translucent, not browned.
- Add the tomato. Stir it in and cook for a minute, just until it softens.
- Whisk the eggs. Beat them in a bowl with the Egg Seasoning until evenly mixed. Doing this before the eggs hit the pan means every bite is flavoured.
- Cook gently. Lower the heat and pour in the eggs. Stir slowly with a spatula, pulling them from the edges to the centre. Take the pan off the heat while the eggs still look slightly glossy; they'll finish cooking from the residual heat.
- Pile and finish. Spoon the bhurji over the toast, scatter chili flakes and coriander on top, and add one last dusting of Egg Seasoning.
Tips for the best bhurji
Keep the heat low. Fast, hot cooking gives rubbery eggs. Patience gives you soft, creamy curds.
Go easy on the salt. Taste before adding any. Seasoning blends already carry salt, and it's easier to add than to take away.
Add a splash of milk or a spoon of cream if you like a custardy texture.
Swap the toast. The same bhurji is wonderful stuffed into a warm pav, rolled in a paratha, or folded into a wrap for a lunchbox.
Make it your own
For a tangier plate, serve with a spoon of Lemon Chutney on the side. For more heat, double the chili flakes. For a heartier breakfast, add a handful of sautรฉed mushrooms or leftover boiled potato cubes to the pan before the eggs go in.
A breakfast worth repeating
This is the kind of recipe that earns a permanent spot in your weekday rotation: minimal chopping, one pan, and a result that feels special. Keep the seasoning jar next to the stove, and you'll find yourself reaching for it on omelettes, fried eggs, and egg sandwiches too.
If you try it, we'd love to hear how you served yours. Happy cooking from all of us at Masala Potli!
