10-Minute Desi Masala Noodles: A Cozy Weeknight Recipe
Share on Social Media
Some evenings call for something warm, fast and a little bit fiery. This is that recipe. Our 10-minute desi masala noodles take plain noodles and a handful of vegetables and turn them into a street-style bowl that tastes like it came from your favourite thela, without the long queue.
Why Noodle Seasoning Is a Kitchen Shortcut Worth Having
Street-style noodles get their punch from layers of flavour: garlic, chilli, pepper, a little tang and a savoury backbone. Building that from scratch means opening six jars. Our Noodle Seasoning brings those notes together in one sprinkle, so you get balanced flavour every time, even on the tiredest weeknight.
What You'll Need
- 200 g noodles of your choice (wheat, rice or millet all work)
- 1 tbsp oil (sesame or any neutral oil)
- 3 to 4 garlic cloves, finely chopped
- 1 small onion, thinly sliced
- 1 cup mixed vegetables: carrot, capsicum and cabbage, cut into thin strips
- 1 to 1.5 tsp Noodle Seasoning, adjusted to taste
- 1 tsp soy sauce (optional)
- Spring onion greens and a squeeze of lemon to finish
How to Make It
1. Boil the noodles. Cook them in salted water until just al dente, then drain and rinse under cold water. A drizzle of oil stops them from sticking together.
2. Heat the pan. Use a wide kadhai or pan on high heat. Street-style noodles love a hot pan, so let the oil shimmer before anything goes in.
3. Sautรฉ the aromatics. Add garlic and onion and stir for about 30 seconds until fragrant but not browned.
4. Add the vegetables. Toss for two minutes. You want them crisp-tender, with a little bite left.
5. Season and toss. Add the noodles, sprinkle in the Noodle Seasoning and soy sauce, and toss everything well for a minute or two so every strand is coated.
6. Finish. Turn off the heat, add spring onion greens and a squeeze of lemon, and serve straight away.
Tips for Better Bowls
- Start small with the seasoning. Add a teaspoon first, taste, then build up.
- Keep the heat high. It gives the noodles a lightly smoky, wok-style flavour.
- Add protein. Scrambled egg, crumbled paneer or crispy tofu all fit right in.
- Make it saucy. A splash of vinegar and a pinch of sugar give a sweet-sour edge.
More Ways to Use Noodle Seasoning
This blend is not just for noodles. Sprinkle it over hot fries, stir it into fried rice, dust it on roasted peanuts or sprinkle some over a plate of buttered corn. It also works well as a quick topping for roasted makhana when you want a spicy snack.
A Bowl That Fits Any Occasion
Make a big batch for a rainy-day dinner, pack it into a tiffin for the next day's lunch, or let kids customise their own bowls with their favourite veggies. It is simple, forgiving and endlessly adaptable, which is exactly what a good weeknight recipe should be.
