Masala Egg Bhurji Toast: A 10-Minute Breakfast

The breakfast that saves busy mornings
Some mornings you want something better than plain toast, but you have about ten minutes and zero patience for chopping. This masala egg bhurji toast is our answer. It is soft, savoury, a little spicy, and it leans on two pantry staples so you can skip the long ingredient list.
Bhurji is India's beloved scrambled egg, usually cooked with onions, tomatoes and green chillies. Here we keep the spirit but shortcut the spice work with Masala Potli Egg Seasoning and a little Garlic Powder.
What you will need
- 3 eggs
- 1 tbsp butter or oil
- 1 small onion, finely chopped (optional but lovely)
- 1 small tomato, finely chopped
- 1 tsp Egg Seasoning, plus a pinch to finish
- 1/4 tsp Garlic Powder
- 2 slices of bread, sourdough or regular
- Fresh coriander, chopped
- Salt, only if needed, since the seasoning is already seasoned
How to make it
1. Build the base
Melt the butter in a pan over medium heat. Add the onion and cook for two minutes until soft, then add the tomato and cook until it just breaks down.
2. Add the spice
Stir in the garlic powder and Egg Seasoning and let them sizzle for about 20 seconds. Toasting the spice in the fat wakes up the aroma, and it means no raw powdery taste later.
3. Scramble gently
Beat the eggs in a bowl, pour them in, and stir slowly with a spatula. Pull the eggs in from the edges and take the pan off the heat while they still look a touch glossy. They will finish cooking on the way to the plate.
4. Toast and pile
Toast the bread until properly crisp, spoon the bhurji on top, and finish with coriander and one more pinch of seasoning.
Little tricks worth knowing
Low and slow wins. High heat makes bhurji rubbery. Medium heat and patience give you soft, creamy curds.
Add a little cheese. A slice of cheese melted over the hot bhurji makes a lovely toastie. Fold the bread over and press it in the pan.
Make it a wrap. Spoon the bhurji into a warm roti with a smear of chutney for a lunchbox-friendly roll.
Feeding a crowd. Scale up to a dozen eggs and use the same 1 tsp of seasoning per 3 eggs, then adjust to taste.

Egg seasoning is built for exactly this job. It balances salt, warmth and a gentle heat so you are not measuring five separate jars at 8 a.m. Garlic powder adds that mellow, roasted-garlic depth without any peeling, and it disperses evenly through the eggs instead of leaving sharp raw bites.
Together they give you the flavour of a well-built masala with a fraction of the effort, which is what weekday cooking is all about.
Serving ideas
Pair the toast with hot masala chai, a side of sliced cucumber, or a spoon of tangy pickle for contrast. If you enjoy a sweet-and-sour kick, a dab of Lemon Chutney on the side is a brilliant match for the rich eggs.
